Recommendation needed for one night trip.

Hello all, We have been looking for an overnight backpacking trip within two hours from the portland area. Ideally something that is around 6-8 miles round trip. Not to steep as we plan to bring the dog with us. Time frame is the last week of August, so hopefully something that is relatively light traffic. We plan on going tuesday to wednesday. I would like to have some water availible for fishing/swimming/filtering. Ive been doing a lot of research on various websites but am hoping someone has a good idea for us. We like to go where the people arent. I know its a rather broad question, but there are so many trails around that Id like some help narrowing one down. We are generally comfortable with difficult hikes, but the dog is not so comfortable with steep cliffs and anything more than ten miles. She is really clumsy and getting older. Any recommondation for a dog friendly hike into a lake or slow moving river where we can camp for a night would be most welcome. Thanks!
