Can anyone tell me what the arrowed peaks are? This is looking south from Dog Mtn with Defiance in the middle. Thanks!

I think you hit the jackpot! As far as I know, none of those prominences have a name! I think that from left to right they are:
1) Point approx. 3,560' above the Viento Ridge
2) Point approx. 3,840' above the Cabin Creek Ridge
3) The stuff up toward Green Point Mountain (the "mountain" is invisible in my opinion) above Shellrock Mountain (the hump in front to the right with scree slopes going quite far up the sides).

You cross the middle bump if you come up the Cabin Creek Ridge and continue up where Pablo headed east. The bump has a rocky outcrop below the summit and no views.
The righthand bump(s) is(are) close to one of the trails above Herman Creek.

The left hand bump does have a "trail" to it, and you can get very close by car via dirt/gravel roads. It's a lot more fun to hike a loop returning via the Starvation Creek trail, should you have some masochistic urges to satisfy. Without exaggeration I can say there are over 500 trees down along the route I took following an ancient logging road grade then a bushwhack route up the rest of the ridge. There is also plentiful poison oak along the trail that is difficult to avoid.

Don, I wondered what was up that powerline road (in blue) on your map when I rode my bike down the Old Scenic Highway bikepath to Viento SP. As an aside, they have plans to turn that campground into biker/hiker only. A Ranger told me that when they did some work on the old highway portion beyond the CG (signed No Tresspassing), they dug down a few few feet and hit pavement w/ a yellow line down the center! So they old highway is still there, just needs a few feet of dirt removed!
