MSH was my first volcano summit and remains my favorite. It's pretty awesome to look into the crater, and the views of the surrounding big summits are great too. After that I did South Sister and it was almost as cool
All this to say that I agree with these two (in either order) as the entry point for volcano summits. Mt McLoughlin is nice and seeing Shasta looming to the south was cool, but my wife and I did because we happened to be in Medford for other reasons. I wouldn't make it a top priority unless it's convenient for you to get there.
