Scrambling to the top of Barrett Spur offers incredible sights in the form of spectacular closeup views of Mt. Hood and crevasses for minimal effort. It's a day trip from Hood River.

If your car can get there, Tattoosh Peak (S of Rainier). Stuff in the S part of Goat Rocks could be nice depending on when you're there, but could be crowded. Literally anywhere in the Alpine Lakes Wilderness would be a good choice - throw a dart at the map. :)
If your minivan can't negotiate the above, a fun alternative is the hike to the summit of Pinnacle Peak in Mt. Rainier NP. It looks imposing, but the hiking trail takes you almost there, then it's an easy (Class 2/3) scramble to the summit. You get a great closeup view of Mt. Rainier and looking down on Paradise Park. This is a half day hike from the car.
