Hello Guys,
A month ago we backpacked McNeil point.
The best part was being at top looking at sunset while having your dinner.
I am trying to find backpackable one nighter hike with similar final destination. Preferably Mt. Hood, Mt. Jefferson

You get good sunsets from Paradise Park, similar distance and similar scenicness

Or Yocum Ridge? A bit harder hike.

Yocum ridge would be too much for 1 nighter on a normal weekend.
Maybe, Paradise park.
Still looking something around 8-9 miles.

I'm not going to post my favorite spots because they're delicate/sensitive, and camping should be avoided. Maybe camp on the snow? You can thrash around in it, stomp it to death, and the evidence is gone in a few days. And it's fun, feels all adventurous and alpiney. Anyway, maps and aerial photos make it pretty easy to find your own secret spot.

You gave me quite a puzzle. I dont know if I can solve it as I am new to NW.
And being a beginner, would avoid snow I guess.

Is there a spot on Tom Dick and Harry Mountain that isn't crowded?

Tom-Dick Mtn. not too crowded? Must be talking about a weekday. The weekends are packed at the trailhead and all along the trail during the days, and Mirror Lake has had a lot of tents.
I suppose if you head up the trail at dinner time, you would find a place to throw your sleeping bag for the night (not much room for a tent), and get out before the next day's masses trample you to death.
I think Paradise Park is a great location for a sunset viewing.
